What to Expect
You arrive in Kitakyushu, a port city in Fukuoka Prefecture with deep roots in maritime culture and a strong local food scene built around fresh seafood. As you step into the casual restaurant where the session is held, your guide introduces the format and connects you with the sushi chef who will lead the hands-on portion of the experience.
The chef demonstrates nigiri techniques directly in front of you, showing how to shape rice, handle fish, and assemble each piece. You then follow along, forming your own sushi under the chef’s guidance. Your bilingual guide is on hand throughout, translating instructions and helping you communicate directly with the chef so nothing gets lost between steps.
As the session progresses, you put your questions to the chef — about ingredients, technique, or the craft itself — and receive answers in real time. By the close of the 90-minute session, you have a plate of nigiri sushi that you shaped yourself, ready to eat.
