What to Expect
You arrive in Tenjin, the bustling heart of Fukuoka’s city center, where the restaurant hosting your session is located. Tenjin sits at the core of daily life in Fukuoka, and stepping into a working sushi or seafood restaurant here puts you directly in contact with the local food culture that defines the city. Your guide welcomes you and introduces the format before the session begins.
The sushi chef demonstrates nigiri technique in front of you, and you follow along, shaping rice and placing toppings under their guidance. Your guide translates the chef’s instructions and explains the reasoning behind each step as you work. When questions come up — about rice seasoning, fish selection, or hand pressure — you direct them to the chef through your guide and receive answers in real time.
By the end of the 90-minute session, you have shaped your own nigiri pieces and eaten what you made. The chef’s corrections and feedback are built into the process, so the sushi you finish with reflects the adjustments you made along the way.
