What to Expect
You arrive in Onomichi, a port city in Hiroshima Prefecture known for its coastal character and deep-rooted food culture. As you make your way to the restaurant, you step into a setting that reflects everyday Japanese dining — welcoming and unpretentious. This is not the formal world of high-end omakase; it is the kind of place where locals eat, and where the craft of sushi remains grounded in daily practice.
Once inside, the sushi chef takes you through the fundamentals of nigiri directly at the counter. You watch each technique demonstrated up close, then shape the rice, press it with your palms, and lay the fish across each piece yourself. Your guide is present throughout, translating instructions and helping you direct questions to the chef — about rice seasoning, fish selection, or the pressure and motion behind a clean nigiri form.
By the end of the session, you have assembled your own plate of nigiri sushi using the same methods shown by the chef. You sit down and eat what you have made, closing the experience with a direct connection between the skill you practiced and the result on your plate.
