As you settle in, your guide introduces the format and sets the tone for what follows.
The chef demonstrates core techniques directly in front of you — how to form a rice base, how to apply pressure, how to handle fish — and you replicate each step yourself. Your guide translates the chef’s instructions in real time and channels your questions back to the chef, keeping the exchange direct and practical. You work through nigiri and rolled sushi progressively, adjusting your technique with each piece you shape.
