    Overview

Discover a Small-Scale Miso Workshop in Kameyama

At a time when traditional miso makers are disappearing across Japan, Hishio no Chikara took a different path by opening a new miso workshop in 2023. Located in a restored traditional Japanese house in Kameyama, this small workshop is run by a single maker who handles everything from koji-making and fermentation to packaging, shipping, and sales.

Using traditional methods, the maker produces miso with just three ingredients: locally grown Koshihikari rice, domestically sourced soybeans, and domestically sourced salt. The rice koji is carefully cultivated by hand, and the miso is naturally fermented and aged for more than six months. The result is raw, unpasteurized miso with a rich umami flavor and a clean finish. Made in small batches by a single maker, the miso has attracted attention on social media and has become so popular that it has sold out at the shop.

See How Miso Is Made and Taste the Difference

During this 60–90 minute guided visit, step inside the production area to see how miso is made. Your English-speaking guide will interpret for the maker, helping you learn about the ingredients, traditional koji-making methods, and natural fermentation process. You can ask questions about how the miso is made and taste different varieties to discover how their flavors develop through fermentation.

After the visit, browse the workshop's direct shop and purchase miso made on site. Please note that this experience focuses on observing the production process, learning about miso-making, and tasting miso rather than hands-on miso preparation.

Key Points to Know Before Joining

    • Please bring a mask for your visit, as the workshop takes special care to maintain hygienic conditions for koji cultivation.
