What to Expect
Matsushima is one of Japan’s most celebrated coastal areas, set along a bay dotted with pine-covered islands in Miyagi Prefecture. You arrive at a casual local sushi or seafood restaurant in the area, where a bilingual guide welcomes you and introduces the session. From the start, you are positioned close to the chef’s workspace, where the hands-on instruction begins in an approachable, relaxed setting that reflects the everyday side of Japanese sushi culture.
The chef demonstrates nigiri-shaping and roll-making techniques directly in front of you, and you follow along step by step. You handle the rice, press and shape each piece, and assemble rolls using the same methods the chef applies in daily service. Your guide translates instructions and facilitates communication throughout, so you can follow the chef’s guidance closely and adjust your technique as you go.
As the session progresses, you build a small selection of sushi pieces shaped by your own hands. The Q&A portion lets you direct questions to the chef — about rice seasoning, fish handling, or any technique you want to understand more deeply. By the end of the 90-minute session, you leave with a set of nigiri and rolls you have prepared yourself, along with a grounded understanding of what goes into each piece of Miyagi-area sushi.
