What to Expect
You arrive at a casual sushi or seafood restaurant in Okayama, a city in the Chugoku region known for its access to fresh local ingredients from both the Seto Inland Sea and surrounding farmland. As you step inside, your guide welcomes you and introduces the session, setting the context for what you are about to make and the role the chef will play in guiding you through it.
The chef demonstrates nigiri technique directly in front of you, showing how to portion, press, and shape rice before placing the topping. You follow along, working with your hands to replicate each step as it is shown. Your guide translates the chef’s instructions and keeps the session moving, so you can ask questions at any point and get answers directly from the person teaching you.
By the end of the session, you have a plate of nigiri sushi that you shaped yourself. You sit down to eat what you made, with the satisfaction of having formed each piece from start to finish. The experience closes with a clear sense of what goes into the craft — the rice pressure, the topping placement, the rhythm of the process — carried through every piece on your plate.
