What to Expect
You arrive at a casual sushi restaurant in Nagahama, a historic lakeside city in Shiga Prefecture known for its connections to traditional Japanese craftsmanship and merchant culture. As you step inside, your guide introduces you to the setting and walks you through what the session will cover, giving you a sense of what to expect before the chef takes the lead.
The chef demonstrates how to form and press nigiri sushi, and you follow along, shaping rice and placing toppings under direct instruction. Your guide translates and relays the chef’s techniques as you work, so you can adjust your grip, posture, and pressure in real time. You ask questions as they come up, and the chef responds through your guide throughout the session.
By the end of the 90 minutes, you have hand-pressed your own nigiri pieces and eat what you have made. You leave with a practical understanding of the techniques behind one of Japan’s most recognized culinary traditions, practiced in the city where you experienced it.
