What to Expect
When you arrive in Nasushiobara — a city in Tochigi Prefecture known for its clean water and proximity to quality regional produce — you step into a casual local restaurant where the session takes place. Unlike formal omakase settings, the atmosphere here is approachable, and the focus is on participation. Your guide welcomes you, introduces the format, and sets the stage for the hands-on session ahead.
The sushi chef demonstrates nigiri technique directly in front of you, walking through each step of the process. You then take over, shaping rice and placing fish as the chef has shown. Your guide translates instruction and keeps the session moving, so you can ask questions at any point — about technique, ingredients, or the traditions behind what you are doing. You work through multiple pieces, refining your grip and form with each attempt.
By the end of the 90-minute session, you have a plate of nigiri that you shaped yourself, ready to eat. Tasting your own finished pieces is the natural conclusion to the class, giving you a direct comparison between what you made and what you observed the chef produce. You leave with a practiced understanding of how nigiri comes together from rice to finished bite.
