The broth is made with bonito, gently acidic flavors, soy sauce, and grated yam, and is finished off with soba-yu (hot water in which soba was boiled). Soba Kaiseki Muan is open for lunch from 11:30 AM to 2:30 PM and for dinner from 5:30 PM to 9:00 PM. However, please note that they are closed on Sundays.
