What to Expect
You arrive at a casual sushi restaurant in Maihama, a district in Chiba Prefecture situated along the eastern shore of Tokyo Bay. As you step inside and settle in, you are introduced to the setting and the format of the session, with a guide on hand to walk you through what is about to unfold.
The sushi chef takes the lead, demonstrating in front of you how to form and press nigiri sushi. You follow along, working with sushi rice and fish to shape each piece by hand. When technique or ingredient questions come to mind, you direct them to the chef through the guide, who facilitates the exchange throughout. The session moves at a pace that allows you to repeat and refine each step.
By the end of the 90-minute session, you have hand-shaped a selection of nigiri pieces that you sit down to eat. The result is something you have made yourself, guided by a working sushi chef.
